Green Beans with Cranberries and Almonds
|2 lb.||fresh green beans, trimmed|
|2 tbsp.||coconut oil|
|1/4 tsp.||ground nutmeg|
|1/4 tsp.||ground allspice|
|Salt and freshly ground pepper, to taste|
|1/2 cups||sliced almonds, toasted|
|1/2 cups||dried cranberries|
|Juice and zest from 1/2 of one orange|
- To toast almonds, warm a skillet over medium heat, add almonds, and cook, stirring frequently, until almonds are slightly browned. Remove from heat and set aside.
- In the same skillet, saute green beans in the coconut oil until just tender, 6 to 8 minutes. Add spices and cook 30 seconds more. Add salt and pepper to taste, and remove from heat. Toss with the almonds, dried cranberries, and the orange zest and juice. Serve warm.
