|1/2 lb.||cottage cheese|
|1/2 lb.||Ricotta, Parmesan or other sharp cheese|
|3 oz.||cream cheese|
|1/2 lb.||butter, melted|
|1/2 lb.||filo pastry sheets, cut into half or thirds|
- Beat eggs. Fold in cheeses. Add salt and pepper (to taste.)
- Brush melted butter on each filo sheet. Place a teaspoon of the filling on the end of the filo strip.
- Fold the lower corner over the filling to make a triangle. then fold the upper corner over the filling to make the next triangle. Continue folding from side to side until the entire strip is used and a small triangle is formed.
- Brush with melted butter. Place on cookie sheet. Bake at 350 degrees about 15 minutes or until golden brown. Serve hot or when cool.
