1/2 lb. Feta cheese
1/2 lb. cottage cheese
1/2 lb. Ricotta, Parmesan or other sharp cheese
3 oz. cream cheese
eggs, beaten
1/2 lb. butter, melted
1/2 lb. filo pastry sheets, cut into half or thirds


  1. Beat eggs. Fold in cheeses. Add salt and pepper (to taste.)
  2. Brush melted butter on each filo sheet. Place a teaspoon of the filling on the end of the filo strip.
  3. Fold the lower corner over the filling to make a triangle. then fold the upper corner over the filling to make the next triangle. Continue folding from side to side until the entire strip is used and a small triangle is formed.
  4. Brush with melted butter. Place on cookie sheet. Bake at 350 degrees about 15 minutes or until golden brown. Serve hot or when cool.
