Parmesan Pesto Toasts

Ingredients

baguette
 sun dried tomatoes
5 oz. Parmesan cheese, shaved thinly
1 cups fresh basil leaves
4 tbsp. pine nuts
cloves of garlic, peeled
1/4 cups olive oil

Instructions

  1. Freeze the baguette until firm. Cut into slices, using a sharp knife. Toast the slices under a hot grill until they are golden brown on both sides.
  2. Make pesto: Place basil leaves, olive oil, garlic, pine nuts in food processor and process for 20-30 seconds until smooth.
  3. Spread the pesto mixture evenly over the toasted slices. Top with strips of tomato and shavings of Parmesan cheese.
