Pineapple Fried Rice with Tofu

8 oz. tofu
1/3 cups soy sauce
1 tsp. dark sesame oil
3 tbsp. vegetable oil
cloves garlic
1 tbsp. grated, peeled ginger root
1/2 tsp. chili paste
red pepper, diced
stalk celery
green onions
20 oz. can unsweetened pineapple chunks
4 cups cooked brown rice
 toasted cashews


  1. Cut the tofu into 1/2 inch cubes and place in a bowl. Pour the soy sauce and sesame oil over the tofu cubes and stir gently. Set aside.
  2. Add the pineapple and cooked rice, stir fry until the rice is hot, about 3 minutes. Serve topped with toasted cashews.
