Pineapple Fried Rice with Tofu

|1/3 cups||soy sauce|
|1 tsp.||dark sesame oil|
|3 tbsp.||vegetable oil|
|1 tbsp.||grated, peeled ginger root|
|1/2 tsp.||chili paste|
|1||red pepper, diced|
|20 oz.||can unsweetened pineapple chunks|
|4 cups||cooked brown rice|
- Cut the tofu into 1/2 inch cubes and place in a bowl. Pour the soy sauce and sesame oil over the tofu cubes and stir gently. Set aside.
- Add the pineapple and cooked rice, stir fry until the rice is hot, about 3 minutes. Serve topped with toasted cashews.
