Eggplant with Curry Sauce
|1 jar||Trader Joe's curry sauce|
|1/2 lb.||firm tofu, cut into 1/2" cubes (optional)|
|1 cups||garbanzo beans|
|1/2 cups||frozen peas|
- Heat Trader Joe's curry simmer sauce in a saucepan and add cauliflower in pieces (add tofu if desired)
- Cook on low (simmer) heat, stirring once in a while, until vegetables are fully cooked and have absorbed flavor, about 25 minutes Add garbanzo beans and peas and cook for 10 more minutes
- Serve with rice or farro.
