Wafels (Belgium classic waffles)

Less cholesterol. Inspired by Waring Pro manual.

Liquid mixture
3/4 cups water, luke warm (105-110 F, 40 C)
2 1/4 tsp. active dry baker's yeast
Flour mixture
3 cups unbleached flour, sifted
1/4 tsp. salt
More liquids
3 large eggs, separated (see instructions)
1/4 cups Egg Beaters
1/3 cups sugar
1 1/2 cups 2% milk, luke warm (105-110 F, 40 C)
3/4 cups water, luke warm (105-110 F, 40 C)
4 tbsp. unsalted butter, melted and cooled
2 tsp. vegetable oil
2 tsp. vanilla extract


  1. MIXTURE: In a large bowl, mix the 3/4 cup of lukewarm water with the 1 tsp of sugar. Sprinkle the yeast over it. Let stand for 5 to 10 minutes, until the mixture begins to foam.
  1. MIXTURE: Sift the flour and salt into a medium size bowl, stir to blend, and put aside.
  1. WHITES ET AL: Separate 3 eggs, preserving the egg whites. Discard two of the yolks. Add the remaining yolk to the liquid mixture. Beat the 3 egg whites until stiff peaks form.
  1. LIQUIDS: Add 1/4 c Egg Beaters, and 1/3 cup sugar to the yeast mixture. Stir to blend. Add 3/4 cup water along with the milk, melted butter, oil, and vanilla. Stir until the mixture is smooth.
  2. Stir the liquid mixture into the flour mixture and beat until the mixture is smooth. Fold the egg whites gently into the batter.
  3. Let the batter stand for 1 hour, stirring every 15 minutes.
  4. On a Waring Pro Waffle maker, use setting 4. Do not open wafflemaker while cooking.
