Nachos Grande

Ingredients

4 cups tortilla chips
15 oz. can refried beans
1 1/2 cups diced tomatoes
1 tbsp. minced, canned green chilies (optional)
1/2 cups salsa
1/4 cups sliced black olives
1/4 cups sour cream
6 oz. shredded cheddar cheese (about 2 cups)
2 tbsp. minced scallions

Instructions

  1. Preheat the oven to 400F. Choose a baking dish 9x13 inches, with 2 inch-high sides.
  2. Layer all the ingredients in the baking dish in the order given above. If the refried beans are too stiff to easily spoon over the chips, thin them with a little water.
  3. Bake about 15 minutes, until the beans are hot and the cheese is melted and bubbling.
  4. Variations: add corn kernels, shredded zucchini, or chopped cilantro to the assembly.
