Ingredients

1 cans refried beans
Ezekiel whole grain tortillas
1/2 cups shredded cheddar cheese
2 tbsp. salsa
1/2 cups mixed greens
2/3 cups frozen corn kernels

Instructions

  1. Warm tortillas and heat a mixture of refried beans with salsa. Spread bean mixture on tortillas.
  2. Top with grated cheese, cooked corn kernels and mixed greens.
  3. Roll up and serve warm.
  4. Note: you can add a lot of different kinds of leftovers to these wraps. For example, tofu stir-fry or curry dishes, leftover vegetables or rice, etc.
