Vegetable Kabobs with Seitan

8 oz. seitan
bell peppers
2 medium summer squash
8 oz. canned pineapple chunks
red onions
1/2 lb. mushrooms
1 basket cherry tomatoes
1/2 cups balsamic vinegar
1/4 cups olive oil
2 tbsp. water
garlic cloves
2 tbsp. minced fresh rosemary
1 tsp. oregano
1 tbsp. honey or brown sugar


  1. Place seitan, all cut-up vegetables and pineapple in a large plastic container with a tight-fitting lid. Add the marinade and marinate in refrigerator for 6 to 12 hours.
  2. Preheat a gas grill to medium-high.
  3. Using metal skewers, thread several skewers with seitan, peppers and onion. Make several others with summer squash, pineapple, mushrooms and tomatoes. Each will grill in about the same time. Or mix all ingredients
  4. When grill is ready, brush with oil. Grill, turning occasionally 8-12 minutes. Place skewers on a large platter.
