Vegetable Kabobs

Ingredients

12 cherry tomatoes
1 medium red onion
1 small zucchini
red pepper
8 oz. mushrooms
wooden skewers
 grilling sauce

Instructions

  1. Wash all the vegetables. Chop pepper, zucchini and onion into pieces suitable for skewering. Leave mushrooms whole or halve, depending upon size. Brush with grilling sauce, if desired.
  2. Thread the vegetables onto skewers, alternating types for color
  3. Grill and serve with rice, cous cous or farro.
