African Pineapple Peanut Stew

Different, delicious and fairly quick to prepare.

1 cups onions, chopped
2 cloves garlic, minced or pressed
1 tbsp. vegetable oil
1 bunch Swiss chard or kale, 1" thick slices (4 cups sliced)
20 oz. crushed pineapple (about 2 cups), undrained
1/2 cups peanut butter
1 tbsp. hot pepper sauce
1/2 cups fresh cilantro, chopped
to taste peanuts, crushed
to taste green onions, chopped


  1. Add the pineapple and its juice to the onions and bring to a simmer.
  2. Stir in the kale or chard, cover, and simmer, stirring a couple of times, until just tender, about 5 minutes.
  3. Mix in the peanut butter, Tabasco, and cilantro and simmer for 5 minutes. Add salt to taste and server.
