Vegetarian Chili using Crock Pot

Ingredients

1 cups texturized vegetable protein
1 1/2 cups onions, finely chopped
1 1/2 tsp. fresh garlic, minced
1/3 cups chopped canned green chiles, undrained and c
1/2 tsp. salt
1 tsp. dried oregano
1 tsp. cumin
1 1/4 tsp. chili powder
3 cups canned red kidney beans, drained and rinsed
1 1/2 cups low-sodium tomato juice

Instructions

  1. Combine the onion & garlic in large skillet or saucepan and cook, covered over low heat until soft.
  2. Stir frequently to prevent scorching.
  3. Add all other ingredients and mix thoroughly in crock pot. Cook over low heat for 12 hours.
