Omelette

Ingredients

 fresh spinach
eggs
2 tbsp. milk
 salt
 pepper
green onions
1/2 roasted red pepper
olives
1/4 cups feta cheese

Instructions

  1. Put the spinach in a pan, and cover. Heat on low-medium until the spinach wilts, about 5 minutes.
  2. Mix the eggs with the milk and salt and pepper to taste.
  3. Spray omelet pan with cooking spray, and heat a drop of water will bounce on it. Pour the mixture in the pan. Using a fork move the edges inward, move the pan to let the mixture cover to the outside. Cook mixture until it sets (before it is done).
  4. On one half of the omelet: place spinach, feta cheese and remaining ingredients. Fold the other half over it. Let cook for two minutes. Turn it over, for 30 seconds. Serve to your husband.
