Kashi Good Friends Walnut Tofu Loaf

1 cubes cube vegetable broth
1 lb. silken tofu (drain liquid into a measuring cup and add enough water to equal 1 cup)
3 cloves garlic, minced
2 tsp. Italian seasoning
1 1/4 tsp. paprika
1 tsp. celery salt
1/2 cups rolled oats
1 cups chopped walnuts
2 cups Kashi Good Friends
1/2 cups whole wheat flour
1 cups yellow onions, chopped
1/2 cups russet potato, grated


  1. Heat water and tofu liquid in a microwave 2 minutes. Add broth and stir until dissolved. Stir in garlic and seasonings. Mix remaining ingredients together. Place in oil sprayed 2-quart casserole dish and bake uncovered at 375°F for 1 hour or until set in the middle.
