Cauliflower with Curry Sauce

1 jar Trader Joe's curry sauce
1 lb. cauliflower
1/2 lb. firm tofu, cut into 1/2" cubes (optional)
1 cups garbanzo beans
1/2 cups frozen peas


  1. Heat Trader Joe's curry simmer sauce in a saucepan and add cauliflower in pieces (add tofu if desired)
  2. Cook on low (simmer) heat, stirring once in a while, until vegetables are fully cooked and have absorbed flavor, about 25 minutes. Add garbanzo beans and peas and cook for 10 more minutes
  3. Serve with rice or farro.
