Garlic Aioli

Use it as a dip, or spread it on sandwiches.

Ingredients

6 cloves garlic, peeled and halved
1/2 tsp. salt
egg, yolk only
1 cups olive oil
lemon, juice only

Instructions

  1. You can do this with a mortar and pestle or a food processor. Grind the garlic, add the salt and egg yolk, and beat until the egg turns lighter in color. Very, very slowly, drizzle in the olive oil, followed by the lemon juice. Stir constantly.
  2. Season to taste. You may also add herbs for variation.
