Lemon Herb Marinade

Nicely flavored sauce to flavor vegetables before cooking.

1 tbsp. lemon peel, grated
2 tbsp. fresh basil, chopped
1 tbsp. fresh thyme, chopped
1 tbsp. fresh chives, sniped
2 tbsp. capers, chopped
2 tbsp. fresh lemon juice
1/2 cups olive oil


  1. In large shallow glass bowl, whisk together all ingredients until well blended.
  2. Add vegetables or other foods to the marinated, turning to coat.
  3. If preparing ahead, store in airtight container in refrigerator up to two days. Stir well before using.
