Spicy Tofu and Peanut Noodle Salad

This Asian noodle salad with a predominant spicy peanut flavor is made with whole-wheat spaghetti noodles for a little extra fiber. Most of the items are seasonings that can be quickly measured and mixed together for the sauce.

Peanut sauce
1 clove garlic, minced
1 tsp. fresh ginger, peeled and minced
1 1/2 tbsp. peanut butter, (chunky)
1 tbsp. tamari sauce
1 tbsp. rice vinegar
1 tbsp. water
1 tbsp. sesame oil
1/2 tsp. chili garlic sauce
1/2 lb. firm tofu
1/2 cups red bell pepper
1/2 cups carrots, shredded
1/8 lb. snow peas, trimmed and broken in half
1/2 cups green onions, sliced
1/8 cups fresh cilantro, chopped
2 cups whole wheat spaghetti, cooked
1/3 cup peanuts, chopped


  1. Whisk together the peanut sauce ingredients in a small bowl and set aside.
  2. Optionally, cook the tofu in a tbsp. of olive oil.
  3. Combine the salad ingredients (except for the noodles) in a large serving bowl. Add the noodles and peanut sauce and toss gently to mix. Sprinkle with chopped peanuts, if desired. Serve at room temperature
