Moroccan Spiced Sweet-Potato Medley

A delicious, spicy combination of vegetables cooked with bulgur and sweetened with raisins.

2 tbsp. olive oil
1 medium onion, sliced
2 cloves garlic
1 1/2 tsp. dried coriander
1 1/2 tsp. cumin seeds
1 tsp. salt
1/4 tsp. cayenne pepper
1 1/2 lb. sweet potatoes, peeled & cut into 3/4" chunks
14.5 oz. stewed tomatoes, diced
1 cups bulgur grain
2 1/4 cups water
14 1/2 oz. garbanzo beans, rinsed and drained
1/2 cups raisins
1 cups fresh cilantro, loosely packed, chopped
 plain low-fat yogurt, (optional)


  1. In a large skillet, heat oil over medium heat until hot. Add onion, cover and cook until tender and golden, about 8 minutes.
  2. Add garlic, coriander, cumin, salt and cayenne. Cook for 1 minute.
  3. Add potatoes, tomatoes, bulgur and water. Heat to boiling over medium-high heat. Reduce heat to medium-low. Cover and simmer until potatoes are tender, about 20 minutes.
  4. Stir in beans, raisins and cilantro. Heat through. Serve with yogurt if you like.
