Moroccan Spiced Sweet-Potato Medley
A delicious, spicy combination of vegetables cooked with bulgur and sweetened with raisins.
|2 tbsp.||olive oil|
|1 medium||onion, sliced|
|1 1/2 tsp.||dried coriander|
|1 1/2 tsp.||cumin seeds|
|1/4 tsp.||cayenne pepper|
|1 1/2 lb.||sweet potatoes, peeled & cut into 3/4" chunks|
|14.5 oz.||stewed tomatoes, diced|
|1 cups||bulgur grain|
|2 1/4 cups||water|
|14 1/2 oz.||garbanzo beans, rinsed and drained|
|1 cups||fresh cilantro, loosely packed, chopped|
|plain low-fat yogurt, (optional)|
- In a large skillet, heat oil over medium heat until hot. Add onion, cover and cook until tender and golden, about 8 minutes.
- Add garlic, coriander, cumin, salt and cayenne. Cook for 1 minute.
- Add potatoes, tomatoes, bulgur and water. Heat to boiling over medium-high heat. Reduce heat to medium-low. Cover and simmer until potatoes are tender, about 20 minutes.
- Stir in beans, raisins and cilantro. Heat through. Serve with yogurt if you like.
