Russian Tea Cakes

Buttery melt-in-your-mouth cookies, are twice rolled in powdered sugar and filled with finely chopped walnuts.

Yield:2 dozen


1 cups butter
1 tsp. vanilla extract
6 tbsp. powdered sugar
2 cups white unbleached flour
1 cups walnut pieces, chopped
1/3 cups powdered sugar, for decoration


  1. Preheat oven to 350 °F (165 °C).
  2. In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts.
  3. Roll dough into 1" balls, and place them 2" apart on an ungreased cookie sheet.
  4. Bake for 12 minutes in the preheated oven. When cool, roll in remaining powdered sugar. I also like to roll mine in the sugar a second time.
