Rhubarb Strawberry Dessert

Ingredients

3 stems rhubarb, chopped
3/4 cups sugar
1 cups water
1 tsp. lemon juice
1/4 cups water
1 tbsp. cornstarch
2 cups strawberries

Instructions

  1. Mix the rhubarb, 1 cup water and sugar in a pan. Boil until the rhubarb is soft, about 2 minutes.
  2. Drain the juice into a separate container.
  3. Mix the corn starch with 1/4 cup water and stir in the juice.
  4. Boil 2 to 3 minutes until thick and foamy. Let it cool down a bit.
  5. Mix in the lemon juice. Carefully mix in the rhubarb and sliced strawberries.
  6. Let it cool down.
