Speculaas (Dutch spice cookies)

Ingredients

3/4 cups butter, firm
2 cups unbleached white flour
1/2 tbsp. baking powder
3/4 cups butter, firm
11/4 tbsp. Speculaaskruiden (see recipe)
 cloves, cardemom, nutmeg
 ground white pepper
1 cups brown sugar, firmly packed
1/8 tbsp. salt
2 tbsp. milk
1/4 cups almonds, blanched

Instructions

  1. Cut the butter in pieces. Mix butter and dry ingredients together in food processor to consistency of dry crumbs. Then add the milk and blend until a dough forms.
  2. Preheat the oven at 300 °F (140 °C).
  3. Sprinkle the mold with flour. Break a piece of the dough and push it in the mold. Cut the excess dough off using a knife. Turn upside down and hit the top, so that the dough falls onto the greased baking plate.
  4. Bake for 20 to 25 minutes in the middle of the oven.
