Kerrie Erwten Soep (Dutch Curry Pea Soup)

Ingredients

3 1/2 tbsp. butter
2 big onion, finely chopped
2 large carrot, finely diced
2 tbsp. curry powder
2 2/3 cups split peas
6 cups vegetable broth
tomatoes, diced
green onions
4 tbsp. fresh parsley
 black pepper, to taste

Instructions

  1. Heat the butter in a large soup pan. Add the onion, carrot and curry powder. Sauté until the onion is golden brown, about 3 minutes.
  2. Add the split peas and water. Bring the mixture to a boil. Add the vegetable bouillon and simmer on low to medium heat for 30 minutes.
  3. Add the tomatoes, green onions and parsley. Continue to simmer for another 15 minutes.
  4. Bring the soup to taste with salt and pepper.
