Basil Leek Pizza Topping

|Yield:||for 1 pizza|
|1 tsp.||olive oil|
|2 cups||leeks, finely chopped|
|2 cups||tomatoes, diced|
|1 cups||roasted red peppers, chopped|
|1/4 cups||fresh basil, chopped|
|3 oz.||feta cheese, grated|
- Make pizza dough (see: Pizza Dough recipe).
- Heat oil in a medium saucepan, add the leeks and salt, cover and cook on medium-low heat for about 7 minute, stirring now and then. Add the tomatoes, roasted red peppers and tomato paste, cover and cook for 10 minutes, stirring a few times. Remove from the heat, stir in the basil and set aside.
- Evenly spread topping over dough and cover evenly with feta cheese.
- Bake at 450 °F (220 °C) for about 15 minutes, until dough is golden brown and cheese is melted.
