Basil Leek Pizza Topping

Yield:for 1 pizza


1 tsp. olive oil
2 cups leeks, finely chopped
1 pinches salt
2 cups tomatoes, diced
1 cups roasted red peppers, chopped
 tomato paste
1/4 cups fresh basil, chopped
3 oz. feta cheese, grated


  1. Make pizza dough (see: Pizza Dough recipe).
  2. Heat oil in a medium saucepan, add the leeks and salt, cover and cook on medium-low heat for about 7 minute, stirring now and then. Add the tomatoes, roasted red peppers and tomato paste, cover and cook for 10 minutes, stirring a few times. Remove from the heat, stir in the basil and set aside.
  3. Evenly spread topping over dough and cover evenly with feta cheese.
  4. Bake at 450 °F (220 °C) for about 15 minutes, until dough is golden brown and cheese is melted.
