Banana Bread

1 cups bananas, very ripe, mashed (3 medium bananas)
3/4 cups sugar
4 tbsp. butter, melted and cooled
1 1/2 cups white unbleached flour
1 tsp. baking soda
1 tsp. salt
1/2 cups walnut pieces, chopped, if desired


  1. Preheat oven to 325 °F (155 °C). Lightly grease a 9 x 5 loaf pan and set aside.
  2. Mash bananas in a large bowl. You should have one cup.
  3. Beat in sugar, then egg and butter.
  4. Combine flour, baking soda, salt and set aside.
  5. Use a wooden spoon to add dry mixture to beaten mixture, stirring just till moistened (batter should be lumpy)
  6. Fold in walnuts (optional).
  7. Spoon batter into prepared pan.
  8. Bake for 55 to 60 minutes. Bread will come away from sides of pan.
  9. Remove loaf from pan; cool on rack
